Ingredients
- 1 Smithfield’s Fresh Pork Butt, pulled 1
- 1 Cup BBQ Sauce1 Cup
- 3 Green Onions, chopped3
- 1 Bag Corn tortilla chips 1 Bag
- 6 oz Shredded Thick Cut Cheddar Cheese 6 oz
- 1 Fresh tomato diced 1
- 2 Fresh Jalapeño sliced 2
- 2 Ears of Corn, shucked2
Instructions
Cover the bottom of cast iron pan with a layer of tortilla chips
Sprinkle chips with some of the tomato, green onion, corn, jalapeño and cheese
Top with some pulled pork and BBQ sauce
Add another layer of chips, tomato, green onion, corn, jalapeño and cheese
Top with more pulled pork and BBQ Sauce, top that with cheese and jalapeño for garnish
Place skillet on flame or if using a grill, close lid and cook for 5-8 minutes until cheese is melted
