Roasted Garlic and Herb Marinated Pork Loin, cut into 6 equal chops

Large red bell pepper, julienned

Large yellow onion, julienned

Large fennel bulb, shaved

Fresh garlic, minced
2 tablespoons
1 teaspoon
Crushed red pepper
1 teaspoon
1/2 cup
White wine
1/2 cup
1 28-oz. can
San Marzano-style tomatoes, crushed
1 28-oz. can
1 tablespoon
Fresh oregano, minced
1 tablespoon
1/4 cup
Fresh basil, chopped
1/4 cup

Directions


  1. Heat a large heavy pan over medium-high heat

  2. Sear the chops for 5 minutes per side and remove to a plate. Reserve

  3. In the same pan, add the peppers, onion, fennel, garlic, and crushed red pepper and sauté until softened

  4. Deglaze the pan with the wine, add the crushed tomatoes, oregano, and the chops and simmer for 5 minutes, or until the chops reach an internal temperature of 145 degrees

  5. Stir in the basil, transfer to a platter, and serve immediately
