Directions

Place the pork loin on a cutting board and trim off any fat or silver skin using a small, sharp knife.

Cut the tenderloin into four equal-sized pieces and pound each one with a meat mallet until about 1/4 inch thick.

In a shallow bowl, mix the flour, salt, and pepper. In a second bowl, crush the oyster crackers. In a third bowl, lightly beat the eggs.

Dredge each piece of pork in the flour mixture, shaking off any excess, then dip into the eggs, and finally coat with the crushed crackers.

Place the coated pork pieces on a small baking sheet and lightly grease the air fryer basket with oil spray..

Arrange the pork in the air fryer basket without overcrowding, spray the tops with olive oil, and air fry at 400°F for 5 minutes.

Flip each piece, spray again, and cook for another 5 minutes or until the internal temperature reaches 145°F.
8.
Transfer the cooked pork to a plate and repeat the process for any remaining pieces.
9.
Serve the pork tenderloin on buns topped with mayonnaise, pickles, red onion, and lettuce.
