Place pork loin on a cutting board and remove any fat and/or silver skin with a small, sharp knife. Cut tenderloin into 4 equal size pieces. Pound each piece with a meat mallet to 1/4-inch thickness
Mix flour, salt, and pepper in a shallow bowl or plate. Crush the oyster crackers and place in a second bowl. Lightly beat eggs in a third shallow bowl. Dip the pork, 1 piece at a time, in the seasoned flour mixture, shaking off any excess flour. Then dip each piece into the eggs and finally into the crouton/cheese mixture. Place the pork on a small baking sheet
Lightly grease air fryer basket and place each piece of pork into it, ensuring it’s not overcrowded. Lightly spray tops of pork with olive oil and place in air fryer. Fry at 400F for 5 minutes. Flip each piece and spray top again. Transfer to a plate and repeat if necessary for remaining pieces. Pork internal temperature should read 145F when complete
Serve tenderloin pieces on a bun and top with mayo, pickles, red onion, and lettuce
