Gather Ingredients from the list below 6 Large eggs 2 tbsp Milk 1/4 tsp Garlic powder to taste Kosher salt To taste Black pepper 1 tbsp Butter 1 cup Diced white onion 1 cup Diced green pepper 2 cups Shredded cheddar cheese

Directions
1.
Lay each slice of bacon on a skillet to partially fry on one side. Place on a paper towel and set aside.

Sauté white onion with green pepper. Add salt and pepper.

In a large bowl, whisk together eggs and milk. Then season with garlic powder, salt and pepper.

In a nonstick skillet over medium heat, melt butter. Add eggs and scramble for 3 minutes. Stir in sautéed onion and peppers. (Optional Step: cook sausage roll and crumble into pieces. Then fold into eggs)

Lay out strips of bacon in three’s on a cutting board. Make sure the cooked side of the bacon is facing up.
6.
Sprinkle the bottom third with cheddar and top with a large spoonful of scrambled eggs. Roll up tightly.
7.
Repeat with remaining cheese and eggs on the rest of the strips of bacon.
8.
Return skillet to heat and sear bacon roll-ups with the seam side facing down. Cook until crispy on all sides, then transfer to a paper towel-lined plate until ready to serve.
