Directions
1.
Preheat the oven to 425ºF.
2.
Place the pie crust in a 9-inch pie plate and flute the edges as desired.
3.
In a large bowl, toss together the apples and orange juice.
4.
Add the cranberries, walnuts, and fresh ginger to the bowl; mix well.
5.
In a small bowl, stir together the flour, ½ cup brown sugar, cinnamon, and nutmeg.
6.
Add the flour mixture to the apples and toss until the apples are evenly coated.
7.
Pour the apple mixture into the prepared pie crust.
8.
Weave the bacon slices together over the top of the pie, leaving 1-inch spaces between slices (4 slices by 4 slices); tuck the ends of the strips under the apples where needed.

Sprinkle the remaining 3 tablespoons of brown sugar over the top of the bacon slices.
10.
Bake the pie at 425ºF for 15 minutes.

Reduce the oven temperature to 350ºF and continue baking for approximately 50 minutes, or until the bacon is browned and crisp.
12.
Cover the edges of the crust with foil if they begin to get too dark.
13.
Let the pie stand for 15 minutes before slicing to serve.
14.
Cover and refrigerate any leftovers.
15.
For best results, serve the pie warm.
