- 1/2 lb Smithfield Center Cut Bacon1/2 lb
- Frozen tater tots
- 1 tablespoon Taco seasoning1 tablespoon
- 2 cups Shredded cheddar cheese2 cups
- 2 Jalapenos, sliced2
- 1 Red chili pepper, sliced1
- 1/2 cup Grape tomatoes, sliced1/2 cup
- 2 Green onions, slided2
Preheat oven to 425 degrees. Line a sheet pan with oversized parchment paper (for easy clean-up). Place bacon strips along pan and cook for 8-12 minutes, or until brown and crispy. Flip bacon strips halfway through cook time. Remove from oven and pat off grease. Cut bacon into bite sized pieces.
Spread tots out on a second greased sheet pan and sprinkle with taco seasoning, stirring so the seasoning covers all sides. Place in oven with bacon on another rack and bake for 25-30 minutes or until crispy.
Remove tots from oven and top with cheddar and bacon. Place back in oven another 5-7 minutes or until cheese is melted.
Top with jalapenos, chili peppers, tomatoes and green onions. Ready to serve.
