Baked Eggs in Avocado

Ingredients


  • 4 slice(s) Smithfield Thick Cut Bacon, diced and cooked until crispy4 slice(s)
  • 3 whole Large avocados3 whole
  • 6 Eggs6
  • 4 oz. Blue cheese, crumbled4 oz.
  • 1/4 cup(s) Fresh cilantro1/4 cup(s)

Instructions


  1. Preheat oven to 450°F. Spray a baking sheet or glass baking pan with cooking spray.

  2. Cut avocados in half. Scoop about an additional 1-2 tbsp of the avocado to create a well for the eggs.

  3. Place avocados flesh side up on prepared baking sheet or glass pan.

  4. Gently crack one egg in each avocado well, making sure to keep the yoke intact.

  5. Bake for 10 minutes, or until eggs are desired temperature. Remove. Top with bacon pieces, blue cheese and cilantro.
