Preheat waffle iron
Toss together the onion, diced ham, and tater tots in a large mixing bowl
In a small mixing bowl, whisk together the maple syrup and sriracha, reserve
Spray top and bottom of waffle iron with pan release spray
Press some of the tater tot mixture into the bottom of the waffle iron, close it tightly, and cook for 5 to 10 minutes, or until golden brown and crispy
Repeat the process as needed until all of the tater tot mixture is used up
Serve hot with the spicy maple syrup on the side, top with more diced ham to your liking
