Heat oil to 350 degrees in a large pot or fryer
In a saucepan, melt the butter and whisk in 1/3 cup of flour to make a roux
Whisk in the milk and bring to a simmer. Cook for 5 minutes then allow to cool
When the béchamel has cooled, combine it with the mashed potatoes, ham, and Swiss cheese
Form the croquettes into 2-inch-long cylinders
Whisk the eggs with about 1/4 cup of water, then dredge the croquettes through the flour, then the egg, then the breadcrumbs
When all the croquettes are breaded, fry them in batches until golden brown and hot throughout
Serve immediately
