Gather Ingredients from the list below
Directions
1.
Peel potatoes and place in a large pot. Cover with water, bring to a boil, add 1 tbsp of salt, reduce to a gentle boil for 10 minutes. The potatoes should be tender.
2.
While the potatoes are cooking, heat the vinegar, sugar and remaining teaspoons of salt in a saucepan. Heat until sugar is dissolved.
3.
Drain potatoes and slice them into 1/8-inch-thick rounds. Be careful as the potatoes will be hot!
4.
Add vinegar mixture to the potatoes and gently stir.
5.
Cut the bacon into pieces and sauté in a skillet over medium heat, stirring frequently until brown and crispy. Once crispy, remove and place on a paper towel.
6.
Sauté the onions in the bacon fat until translucent.
7.
Add beef broth and boil over high heat. Reduce to a simmer and cook until it reduces by half, about 20 minutes.
8.
Pour over the potato mixture and sprinkle with the crispy bacon and chopped chives. Serve immediately and enjoy!
