Ingredients
- 1 Roasted Garlic & Herb Marinated Fresh Pork Tenderloin, butterflied 1
- 2 cups Cucumbers, large dice2 cups
- 1 cup Kalamata olives, pitted1 cup
- 2 cups Mixed small salad tomatoes, cut in half 2 cups
- 1 Small red onion, large dice1
- 1 cup Feta cheese, crumbled1 cup
- 1/4 cup Fresh dill, chopped1/4 cup
- 1/4 cup Fresh basil, chopped1/4 cup
- 1/4 cup Red wine vinegar1/4 cup
- 1/3 cup Extra virgin olive oil 1/3 cup
Instructions
Heat a grill to medium-high heat
Combine all ingredients other than the pork in a large mixing bowl and chill in the refrigerator until ready to serve
Grill the butterflied loin for about 7-9 minutes per side, turning occasionally, or until an internal temperature of 145 degrees is reached
Remove the tenderloin from the grill and allow to rest for 8-10 minutes
To serve: slice the tenderloin into medium-thin slices, mix the salad again and transfer to a large rimmed
