Gather Ingredients from the list below
1, butterflied Roasted Garlic & Herb Marinated Fresh Pork Tenderloin
 
2 cups Cucumbers, large dice
 
1 cup Kalamata olives, pitted
 
2 cups Mixed small salad tomatoes, cut in half
 
1 Small red onion, large dice
 
1 cup Feta cheese, crumbled
 
1/4 cup Fresh dill, chopped
 
1/4 cup Fresh basil, chopped
 
1/4 cup Red wine vinegar
 
1/3 cup Extra virgin olive oil
Directions
1.
Heat a grill to medium-high heat
2.
Combine all ingredients other than the pork in a large mixing bowl and chill in the refrigerator until ready to serve
3.
Grill the butterflied loin for about 7-9 minutes per side, turning occasionally, or until an internal temperature of 145 degrees is reached
4.
Remove the tenderloin from the grill and allow to rest for 8-10 minutes
5.
To serve: slice the tenderloin into medium-thin slices, mix the salad again and transfer to a large rimmed
