Ingredients
- 1 lb. Prime Fresh Smoked Ham1 lb.
- 1 stick Unsalted butter, softened1 stick
- 1 Medium yellow onion, sliced thin1
- 1/2 cup Whole grain mustard1/2 cup
- 1 tablespoon Prepared horseradish1 tablespoon
- 2 tablespoons Peach preserves2 tablespoons
- 8 slices Whole wheat bread8 slices
- 8 slices Swiss cheese8 slices
- 2 cups Arugula2 cups
Instructions
Heat a large sauté pan over medium-high heat
Add one tablespoon of butter and the onions, and cook, stirring often, until caramelized
Remove the onions from the heat and reserve
Combine the mustard, horseradish, and peach preserves in a bowl. Reserve
Heat a large pan or griddle over medium heat
Butter one side of each slice of bread, and place in the pan, butter side down
Top each slice of bread with one slice of Swiss cheese, and cook until golden brown and the cheese has begun to melt
Repeat the process as needed until all bread is golden brown. Place all of the bread cheese side up on a sheet pan
Heat the ham in the same pan until warm and slightly browned
Place an even amount of ham on 4 slices of the bread, and top with the desired amount of onions and arugula
Spread desired amount of horseradish-peach mustard on the remaining slices, place on top of the sandwiches, and cut in half before serving
