Preheat your oven to 400°F. Place 1 tablespoon of butter in a cast iron skillet and let it melt in the oven.
In a blender, combine eggs, flour, milk, salt, and pepper. Blend until smooth.
Once the butter has melted, carefully remove the skillet from the oven. Brush the melted butter up the sides of the skillet to coat evenly.
Pour the egg mixture into the hot skillet.
Scatter ham, shredded cheese, thyme, and sage over the top.
Return the skillet to the oven and bake for 20–25 minutes, or until puffed and golden brown.
Slice, serve warm, and enjoy a savory twist on brunch.
