In a small skillet over medium-high heat, cook the onions in butter for 5–8 minutes, or until they begin to brown; then set them aside.
In a large nonstick skillet over medium-high heat, cook the ham for 2 minutes on each side, or until lightly browned; fold the slices and set them aside.
To assemble one sandwich, spread 1 teaspoon of goat cheese on the bottom bun, then top with one folded slice of ham.
Add 2 tablespoons of caramelized onions, then spread 1 teaspoon of grainy mustard on the top bun.
Place the top bun over the sandwich to finish assembling.
