Directions

Pour the chicken broth into the Instant Pot and place the potatoes directly into the broth.
2.
Set the trivet on top of the potatoes, then carefully place the roast on the trivet.
3.
Close and lock the lid of the Instant Pot. Press the “Manual” button and adjust the timer to 30 minutes.
4.
Ensure the cooking pressure is set to “High” and the release valve is set to “Sealing.”
5.
When the cooking time is complete, perform a “Quick Pressure Release” to open the Instant Pot.
6.
Remove the roast and trivet, leaving the potatoes and broth in the pot, and set the roast on a cutting board to rest.
7.
Mash the potatoes in the pot, then add the blue cheese and stir to combine.
8.
Season the mashed potatoes with salt and pepper to taste.
9.
Slice the roast and serve alongside the mashed potatoes.
