Directions
1.
Grill the Brats: Preheat grill to medium-high heat. Place your Smithfield Pabst Blue Ribbon Brats on the grates and grill for 2-3 minutes per side, just until you get a nice char on the outside.
2.
Caramelize the Onions: While the brats are grilling, set a cast iron skillet directly on the grill (or on a burner at medium-high heat). Melt 2 tablespoons butter and add 1/2 onion, thinly sliced. Sauté, stirring occasionally, until the onions are soft, golden, and mostly caramelized, about 4-5 minutes.
3.
Braise the Brats in Beer: Nestle the charred brats into the cast iron with the caramelized onions. Slowly pour in one 12oz can of Pabst Blue Ribbon - it should come up around brats without fully submerging them. Close the grill lid and let everything braise together for about 10-15 minutes, until the brats are cooked through and the beer has reduced to a rich, savory sauce.
4.
Serve! Serve the brats straight from the cast iron, piled high with the beer-soaked onions. Great in a bun or alongside a fresh summer salad.
