Ingredients
Pork Milanese with Avocado Salsa
- 1 Original Recipe Marinated Fresh Pork Loin Filet, cut into 6 equal chops1
- 4 cups Vegetable oil, for frying4 cups
- 2 cups All-purpose flour2 cups

- 3 cups Seasoned breadcrumbs3 cups

Avocado Salsa
- 3 Ripe avocados, diced 3
- 1 Small red onion, minced1
- 1 Large ripe tomato, finely diced 1
- 1/4 cup Cilantro, chopped1/4 cup
- 1 Lime juice 1
- 1 cup Tomatillo salsa1 cup
Instructions
Heat oil in a heavy pot or fryer to 350 degrees

Set up a breading station by placing the flour in one bowl, whisking together the eggs with a bit of water in a second, and placing the breadcrumbs in a third
To bread the cutlets: dredge each cutlet in the flour, shaking off any excess, dip in the egg wash, making sure to evenly coat each, then dredge in the breadcrumbs, pressing firmly to ensure an even coating
Working in batches, fry each cutlet until golden brown, and drain on paper towels
Serve the cutlets on a platter with the salsa on the side
