Ingredients


Pork Milanese with Avocado Salsa

  • 1 Original Recipe Marinated Fresh Pork Loin Filet, cut into 6 equal chops1
  • 4 cups Vegetable oil, for frying4 cups
  • 2 cups All-purpose flour2 cups
  • 4 Whole eggs4
  • 3 cups Seasoned breadcrumbs3 cups
  • 2 Limes, wedges for garnish 2

Avocado Salsa

  • 3 Ripe avocados, diced 3
  • 1 Small red onion, minced1
  • 1 Large ripe tomato, finely diced 1
  • 1/4 cup Cilantro, chopped1/4 cup
  • 1 Lime juice 1
  • 1 cup Tomatillo salsa1 cup

Instructions


  1. Heat oil in a heavy pot or fryer to 350 degrees

  2. While the oil is heating, pat dry and pound the chops flat using a meat mallet. Reserve

  3. In a large bowl, combine the avocados, onion, tomato, cilantro, lime juice, and tomatillo salsa. Reserve

  4. Set up a breading station by placing the flour in one bowl, whisking together the eggs with a bit of water in a second, and placing the breadcrumbs in a third

  5. To bread the cutlets: dredge each cutlet in the flour, shaking off any excess, dip in the egg wash, making sure to evenly coat each, then dredge in the breadcrumbs, pressing firmly to ensure an even coating

  6. Working in batches, fry each cutlet until golden brown, and drain on paper towels

  7. Serve the cutlets on a platter with the salsa on the side
