Ingredients

Ribs

2 racks, remove membrane Fresh Pork Extra Meaty Back Ribs
 
1 handful Hickory or apple wood chips, soaked and drained

Dry Rub

 
1/3 cup and 1 tbsp. Light brown sugar, packed
 
1 tbsp. Kosher salt
 
1 tbsp. Chili powder
 
1 1/2 tsps. Ground black pepper

Sauce

 
3 tbsps. Yellow mustard
 
1 cup Ketchup-based barbecue sauce
 
1/4 cup Honey
Directions
1.
About one hour before you plan to start grilling, make the rub by combining the brown sugar, salt, chili powder, and pepper in a small bowl.

Place the ribs flat in a roasting pan.
3.
Brush a thin layer of mustard all over the ribs.
4.
Sprinkle the rub evenly over the ribs and rub it in slightly.
5.
Set the ribs aside at room temperature for one hour.
6.
Preheat the grill for indirect cooking at 250 to 300ºF.
7.
If using wood chips, add the drained chips to the grill.
8.
Place the ribs, meaty side down, over a drip pan on the grill.
9.
Close the grill and cook the ribs for 1½ to 2 hours, adding about 12 coals to a charcoal grill every 45 minutes to maintain the heat.

While the ribs are cooking, make the barbecue sauce by combining the barbecue sauce and honey in a small saucepan over medium-low heat.
11.
Bring the sauce to a simmer, stirring often to blend the flavors, then set it aside to cool.

Remove the ribs from the grill and double-wrap each rack in heavy-duty aluminum foil.
13.
Return the wrapped ribs to the grill and cook for another 1½ to 2 hours, or until very tender, adding more coals as needed for a charcoal grill.

Carefully remove the ribs from the grill and unwrap them, being cautious of the hot juices.
15.
Return the unwrapped ribs to the grill and brush them with the barbecue sauce.
16.
Continue to cook the ribs for about 5 minutes, until the sauce is set.
17.
Turn the ribs and repeat with more sauce on the other side.
18.
Remove the ribs from the grill and let them rest for 5 minutes.
19.
Cut the racks into 3- or 4-rib sections.
20.
Serve immediately with the remaining sauce.
