Gather Ingredients from the list below
Sandwich
1 pack Thick Cut Bacon
Breading
Directions
1.
Place the pork loin on a cutting board and trim off any fat or silver skin using a small, sharp knife.
2.
Cut the tenderloin into four equal pieces and pound each one with a meat mallet until it’s about 1/4-inch thick.
3.
Prepare the Breading: In a shallow bowl or plate, mix the flour with salt and pepper. In a second bowl, crush the oyster crackers. In a third bowl, lightly beat the eggs.
4.
Dredge each piece of pork in the flour mixture, shaking off any excess, then dip into the beaten eggs, and finally coat with the crushed oyster crackers.
5.
Place the coated pork pieces on a small baking sheet and lightly grease the air fryer basket.
6.
Arrange the pork in the air fryer basket without overcrowding, spray the tops with olive oil, and air fry at 400°F for 5 minutes.
7.
Flip each piece, spray the tops again, and continue air frying until the internal temperature reaches 145°F. Repeat the process for any remaining pieces.
8.
Serve the pork tenderloin on a bun with bacon, and top with mayonnaise, pickles, red onion, and lettuce.
