- 4 Hometown original fresh sausage patties4
- 3 whole Medium zucchinis3 whole
- 1 Large egg1
- 1 Tbsp. Flour1 Tbsp.
- 4 oz. Shredded mozzarella4 oz.
- 2 Tbsp. Olive oil2 Tbsp.
Grate zucchini and let sit on a colander and squeeze with both hands until the excess liquid is drained.
In a non-stick pan cook sausage patties until brown.
Cut them in small pieces.
In a large bowl mix zucchini, eggs, flour, mozzarella and diced sausage.
Add salt and pepper.
Heat olive oil in a large skillet.
Spoon mixture in the pan and cook both sides until brown and crispy.
