2 lbs. Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin
 
1/2 cup olive oil
 
2 cups seasoned breadcrumbs
Directions
1.
Mix the bread crumbs and olive oil in a bowl until the mixture is moist enough to stick to the meat when pressed.
2.
Place the pork on a shallow cooking sheet.
3.
Press the crumb mixture onto all sides of the meat until no pink is showing, forming a coating about 1/4-inch thick.
4.
Bake the pork in a preheated oven at 400°F for 20 to 25 minutes, or until a meat thermometer inserted into the thickest part reads 165°F.
5.
Remove the pork from the oven and let it rest for 10 minutes.
6.
Slice the pork into 1/2-inch pieces and enjoy!
