Heat a large pan or griddle over medium heat.
Butter one side of each slice of bread, then place the slices in the pan with the buttered side facing down.
Top each slice of bread with one slice of American cheese, and cook until the bread is golden brown and the cheese has begun to melt.
Repeat the process as needed until all slices of bread are golden brown. Place all of the bread, cheese side up, on a sheet pan.
In the same pan, heat the pepperoni, ham, and salami until they are warm and the edges just begin to crisp.
Place even amounts of the warmed pepperoni, ham, salami, and herbs over 4 slices of the prepared bread.
Top each with one of the remaining slices of bread, cheese side down, and press each sandwich slightly.
Cut each sandwich in half before serving.
Get creative by adding other toppings like sautéed mushrooms, black olives, peppers and onions, or even something sweet like fig jam or hot honey!
