Heat a large pan or griddle over medium heat.
Whisk together the eggs, half and half, and pumpkin pie spice until well combined.
Working in batches, dredge each slice of bread through the batter and griddle until golden brown on both sides. Reserve on a sheet pan.
When all 8 slices of French toast are complete, heat the ham in the pan or on the griddle.
To assemble: place one slice of American cheese on 4 slices of French toast, top with an even amount of ham, then top with the remaining slices of toast, pressing slightly.
Cut the sandwiches in half, garnish with a dusting of powdered sugar, and serve immediately with some of the preserves on the side.
