Directions

Cook egg noodles according to package instructions, drain, and keep warm.

While the noodles are cooking, combine the cheese and breadcrumbs in a large bowl, whisk the eggs with 1/4 cup of water in another large bowl, and the flour in another large bowl.

Heat a heavy skillet over medium heat, add half of the oil and heat until shimmering.

Bread the chops by dredging first in the flour, then dip in the egg wash, and finally dredge in the breadcrumb mixture, pressing firmly in the mixture.

Carefully place half of the chops in the pan and fry until golden brown, about 3-4 minutes per side.

Remove the chops and place on a wire rack over a sheet pan, then repeat the process with the remaining chops.
7.
To serve: dress the egg noodles with the butter and chives, place on a large serving platter, and place the chops on top of the noodles.
8.
Serve warm and enjoy!
