Preheat oven to 375 degrees and bring a large pot of water to a boil
While the water is coming to a boil, render the bacon in a large sauté pan until crispy
Drain on paper towels
When the water is at a rapid boil, blanch the Brussels sprouts until bright green and then shock in ice water to stop the cooking
Drain the sprouts well in a colander and pat as dry as you can with a dish towel or paper towels
Combine the breadcrumbs and Parmesan cheese, reserve
Combine the sprouts, bacon, onion, heavy cream, nutmeg, and Gruyère cheese
Transfer the mixture to a baking dish and top with the breadcrumb mixture
Bake for about 30 minutes, or until golden brown and bubbly
Serve immediately
