2 racks Fresh Pork Extra Meaty Back Ribs
 
2 tsps. ground allspice
 
1 tsp. ground cinnamon
 
2 tsps. ground coriander
 
2 tsps. dried thyme
 
1 tbsp. onion powder
 
1 tbsp. garlic powder
 
2 tsps. cayenne pepper
 
1 tsp. ground nutmeg
 
1 tsp. ground ginger
 
4 tbsps. white sugar
 
1 tsp. salt
 
1 tsp. black pepper
 
1 lime
 
1 tsp. soy sauce
 
4 tsps. vegetable oil

Directions
1.
In one bowl, mix together the spices and sugar to create the dry marinade.

In a separate bowl, combine the lime juice, lime zest, soy sauce, and oil to make the wet marinade. Then, pour the wet ingredients into the dry and stir until fully combined. Set the marinade aside.

Preheat your oven to 300°F.

Place the rack of ribs on a large sheet tray or cutting board. Using a small knife and a paper towel for grip, remove the membrane from the underside of the ribs.

Lay a large sheet of aluminum foil on a baking tray, place the ribs on top, and rub the marinade all over them. Wrap the ribs completely in the foil.

Bake the wrapped ribs in the oven for about two hours, or until the internal temperature reaches 195°F to 200°F.
7.
Remove the ribs from the oven and set the oven to broil. Carefully unwrap and discard the foil.
8.
Brush both sides of the ribs with barbecue sauce and return them to the oven, uncovered. Broil for 2 to 3 minutes, or until the sauce just begins to caramelize.
9.
Take the ribs out of the oven, transfer them to a cutting board, cut into pieces, and serve.
