Gather Ingredients from the list below 20 oz. Canned pineapple rings 1 Large yellow onion, large dice 1 Large red bell pepper, large dice from pineapple Pineapple juice 1/4 cup Soy sauce 2 tbsps. White wine vinegar 1 tbsp. Fresh garlic, minced 1 tbsp. Fresh ginger, minced 1 tsp. Ground allspice 1/2 tsp. Cayenne pepper 3 tbsps. Cornstarch

Directions

Preheat oven to 375 degrees.

Heat a large sauté pan over medium high heat, and sear the pork loin on all sides.

Remove the pork from the heat and reserve.
4.
Drain the pineapple rings, reserving the juice.
5.
Place the onions and peppers in the bottom of a baking dish.
6.
Top with the pineapple rings, then the pork loin.

Roast for about 25 minutes, or until the pork reaches an internal temperature of 150 degrees.

While the loin is roasting, combine the pineapple juice, soy, vinegar, garlic, ginger, allspice and cayenne pepper in a saucepan.

Bring the glaze to a boil, combine the cornstarch with a bit of water, and whisk in to thicken to desired consistency.
10.
When the pork is done, remove from the oven and allow to rest for 5 to 10 minutes before slicing.
11.
Return the sliced pork to the pan and pour the desired amount of glaze.
