Ingredients
- 1 Smithfield Roasted Garlic & Herb Marinated Fresh Pork Loin Filet1
- 20 oz Canned pineapple rings 20 oz
- 1 Large yellow onion, large dice1
- 1 Large red bell pepper, large dice 1
- 1/4 cup Soy sauce 1/4 cup
- 2 tablespoons White wine vinegar 2 tablespoons
- 1 tablespoon Fresh garlic, minced1 tablespoon
- 1 tablespoon Fresh ginger, minced1 tablespoon
- 1 teaspoon Ground allspice1 teaspoon
- 1/2 teaspoon Cayenne pepper1/2 teaspoon
- 3 tablespoons Cornstarch3 tablespoons
Instructions
Preheat oven to 375 degrees
Heat a large sauté pan over medium high heat, and sear the pork loin on all sides
Remove the pork from the heat and reserve
Drain the pineapple rings, reserving the juice
Place the onions and peppers in the bottom of a baking dish
Top with the pineapple rings, then the pork loin
Roast for about 25 minutes, or until the pork reaches an internal temperature of 150 degrees
While the loin is roasting, combine the pineapple juice, soy, vinegar, garlic, ginger, allspice and cayenne pepper in a saucepan
Bring the glaze to a boil, combine the cornstarch with a bit of water, and whisk in to thicken to desired consistency
When the pork is done, remove from the oven and allow to rest for 5 to 10 minutes before slicing
Return the sliced pork to the pan and pour the desired amount of glaze
