Line a large baking sheet with foil or parchment paper and place a wire rack on top. Preheat oven to 400 degrees F.
Completely wrap sugar cones in pieces of foil and lightly spray with cooking spray. (Tip! Skip the cooking spray and use non-stick foil).
Starting at the open end of the cone, wrap 1-2 slices of Smithfield Thick Cut Bacon tightly around foil-wrapped cones, overlapping the edges so cone is fully covered. Pinch the top to form a point. (Tip! Use toothpick to hold bacon in place, if necessary).
Place the bacon-wrapped cones point side up on wire rack and bake 23-25 minutes until bacon crispness preference is reached. Cool 3-5 minutes.
Carefully twist and pull cooked Bacon(e)s away from the foil-wrapped cone.
Microwave chocolate on high in 30-second intervals (stirring at each interval) to melt. Once melted, coat inside and dip outer rum of Bacon(e)s with chocolate. Dip rim in red, white & blue sprinkles.
Let chocolate set for 10-20 minutes and top with a scoop of your favorite ice cream.
