Heat a grill to medium-high heat and pre-heat oven to 500 degrees
When the grill is ready, rub the grill grates with a paper towel moistened with the vegetable oil
Grill the ham, peaches, and onions until heated through and slightly charred
Remove the ingredients to a plate to cool slightly
Stretch the dough balls onto two 14-inch pizza pans
Top each crust with dollops of mascarpone, then spread half each of the ham, peaches, and onions over the mascarpone, and top each with half of the gorgonzola dolce
Bake the pizzas, turning once, for about 10 minutes, or until bubbly and the crust is golden brown
Remove the pizzas from the oven, top each with half of the chopped mint, and allow to rest about 5 minutes before slicing
Serve immediately
