Skewers, 6"-10" soaked

Chipotle chili powder or cayenne pepper
sprinkled to taste

Directions


  1. Start by soaking skewers in water for 25-30 minutes.

  2. Heat the broiler.

  3. Cut the pork into 1x4-inch strips that are ¼ inch thick and cut each slice of bacon into thirds.

  4. Place one piece of bacon on top of each pork strip, then thread them onto skewers.

  5. Sprinkle chipotle powder over the bacon.

  6. Arrange the skewers, bacon side up, on a rack in a broiler pan.

  7. Broil 4 to 6 inches from the heat until the bacon is cooked but not crisp, about 5 minutes.

  8. Turn the skewers over and broil until the pork begins to brown.

  9. Turn the skewers back to bacon side up and broil until the bacon is crisp.
